More than 500 years ago Vasco da Gama, set sail from the shores of Portugal in search of the greatest allure of ancient India her spices. This historic journey opened the world to not just a new trade route, but also a rich and vibrant cuisine unlike any the Europeans had known before.

Two hundred years ago the first curry joint opened in Britain ushering in the conquest of Indian cooking over its bland native fare. The British may have ruled India with their power, but She conquered them through Her spices. Tikka masala soon replaced Yorkshire pudding as the nation’s favourite. Curry joints and eateries burgeoned in every neighbourhood.

Yet despite all these advancements into the complexities of Indian cooking, it seems the world has barely scratched the surface of her varied, and in particular, her vegetarian cuisine.
